I tend to do all of my grocery shopping on Wednesdays at Pick N’ Save, because Wednesday is one of the two double coupon days – Saturday is the other, but it’s really busy.
So on Tuesdays, I do a sweep of the refrigerator to check for old produce and expiring items. In my vegetable crisper, I found a yellow squash, a container of mushrooms, a carton of cherry tomatoes and a cucumber that was beyond redemption. I also had an onion.
I decided to make one of my favorite crisper-cleaning meals…Veggie Pasta!
I tossed the cucumber in the garbage (RIP) and chopped up the mushrooms, cherry tomatoes, onion and yellow squash. I added a few cloves of garlic and sauteed it all in some olive oil. From my pantry I grabbed 2 staple items I always keep on hand, pasta and a jar of sauce. The last time Ragu was on sale, I had coupons that took the cost down to 50 cents a jar. I bought the Organic Veggie flavor, because it tastes rich and delicious and provided the biggest nutritional bang for my buck.
I had some Barilla whole grain pasta that cost like a quarter with a coupon, this pasta and Ronzoni Garden Delight are my two favorites. And when they are on sale, I can usually get them free or close to free with coupons.
I dumped the sauce into the veggies and simmered it all together, and then served it over the pasta. It was so, so super delicious!
I used up my veggies and added less than a dollar’s worth of ingredients to make enough for several healthy, yummy, penny pinching meals!
